Graison Gill founded Bellegarde Bakery in New Orleans in 2011 and in 2020 was a finalist for a James Beard Award. He has traveled around the country and around the world—France, Italy, the U.K., Sweden, the Middle East, and Australia—teaching people about baking, milling, and foodways, and his work has been featured on the cover of Food & Wine, Forbes, British Vogue, and The Southern Foodways Alliance.
